My Healthy Thanksgiving go to!!!

First I want to say Happy Early Thanksgiving!

Second, I want to say that I am incredibly thankful for you and your support during all the years I have been doing these weekly newsletters.  I am also thankful for the dedicated practitioners who allow me to share/teach once a month in our membership programs.  We  have 4 practitioner membership groups in the Austin and San Antonio area!!  Thank you also to all the people who have come into the clinic and trusted me to be along side them in their wellbeing journey. 

Last, but certainly not least! A big incredible thank you to my wonderful husband.  His support and constant love have helped me to express my vision for the world. Without him, none of this would have taken place. I love you Charlie!!!

HAPPY THANKSGIVING!

I know it has been a lot this past while, however it is important that we remember and remind ourselves of all the good moments and celebrate those often. 

I wanted this week’s post to be warm, nourishing and easy to digest and good for all. Just in case you do over indulge: Have Enzycore, Zypan and Multizyme on hand and a quick reminder that stress decreases healthy digestion!! It also impacts the Immune system so I am prescibing lots of Joy and Love this year. 

BTW I am kinda a see and smell type cook so the quantities are not exact each time. Is that now called Intuitive Cooking? 😀 It is also perfect for almost all ” Diets” .. Gotta love that. 

My Butternut Pumpkin Soup is a Thanksgiving Winner!

Dr Pia’s Pumpkin Soup: Serves 4 : 20 minutes

One Butternut Pumpkin peeled and roughly cubed.

One medium/large brown onion. chopped.
In a large pan, add a couple of tbsp s of olive or better yet coconut oil,
Add 2 cloves of minced garlic, a little ( too much is not good) minced ginger.
Add chopped onion and brown a little/soft. (I also like to add ground pepper and some Italian herbs and a pinch of sea salt.)
Add pumpkin and mix a little.
Then add organic chicken broth low sodium ( I know… I added salt above… I like to control the salt and the quality ).
If you are Vegan or Veggie  then use a Veggie Broth. 
I also like to switch it up sometimes and add some organic coconut milk and ginger to add an eastern influence.
Almost cover the pumpkin with broth, bring to boil and the simmer till pumpkin is soft. Takes about 15 minutes.
Drag out the Vitamix. Put in the pumpkin mix. If you want it nice and thick then you will use less liquid. If you want it a little thinner then add you can always add liquid. Blend. Careful it is hot!
Serve hot with a dollop of coconut cream on top and a sprig of cilantro.
